Pumpkin Waffles

Pumpkin season is in full swing, and if you’re looking for more pumpkin recipes to add to your repertoire, these easy Pumpkin Waffles are it!

Ingredients

  • 1 ½ cups flour
  • 3 teaspoons baking powder
  • ½ teaspoon baking soda
  • 3 teaspoons pumpkin pie spice
  • ½ teaspoon fine sea salt
  • ¼ cup light brown sugar , firmly packed
  • 1 cup pumpkin puree , not pumpkin pie filling
  • 1 ⅔ cups whole milk
  • 2 eggs
  • 3 tablespoons butter , melted

Instruction

  1. In a medium mixing bowl bowl, whisk or sift together the flour, baking powder, baking soda, pumpkin pie spice and salt. Set aside.
  2. In a separate large mixing bowl, whisk together the eggs, sugar, pumpkin puree, milk and butter, beat until well combined.
  3. Gradually add the dry mixture into the wet mixture, folding gently.
  4. Heat the waffle iron and coat generously with cooking spray.
  5. Add the waffle batter according to package directions. This will vary by waffle maker and brand.
  6. Serve immediately with syrup, candied walnuts and whipped cream.
