Kaiserschmarrn is a popular Austrian dessert that can also be eaten for breakfast. It's a light pancake, cut up while it's frying and topped with fruit and confectioners' sugar.
Ingredients
- 4 tablespoons unsalted butter
- 3 firm, ripe medium peaches—peeled, quartered and sliced 1/4 inch thick
- 1/4 cup granulated sugar
- 1 tablespoon fresh lemon juice
- 1 cup all-purpose flour
- 1 cup milk
- 4 large eggs, separated
- 1 teaspoon finely grated lemon zest
- pinch of salt
- 1/3 cup confectioners' sugar, plus more for dusting
- 1 pint blackberries
