If you’re looking for a way to make sure a morning is unforgettable, you need to serve this fat Elvis monkey bread immediately! With sweet bananas, an ooey-gooey peanut butter-based topping, smoky bacon, and all of the warm tenderness of baked biscuits.
Ingredients
- 1/4 cup unsalted butter
- 1/4 cup creamy peanut butter
- 1/2 cup brown sugar , light or dark
- 2 tablespoons bacon , cooked and crumbled
- 3 bananas , sliced
- 8 refrigerated biscuits , 1 can, cut into 6 pieces each
- 1/3 cup mini chocolate chips
- cooking spray or vegetable shortening
Instruction
- Preheat the oven to 350°F. Coat a 12 well muffin tin with cooking spray or vegetable shortening.
- Place 3 slices of banana in each muffin well. Top with 4 pieces of biscuit dough. Set aside.
- In a small saucepan over low heat, whisk together the butter, peanut butter, brown sugar and salt until melted. Mixture might still be a bit grainy, this fine.
- Spoon approximately 1 tablespoon of the sugar mixture over each muffin tin.
- Bake for 15-17 minutes or until the tops are light brown.
- Remove and allow to cool for 2-3 minutes before inverting onto a serving platter. Sprinkle with mini chocolate chips.
