Creamy Shrimp Scampi Bread Bowl

Shrimp Scampi is a classic Italian dish served in many American Italian eateries. I often get asked what does scampi mean? It is an odd word.

Ingredients

  • 1 round italian bread loaf
  • 2 tablespoons salted butter , melted (1/4 teaspoon fine sea salt if unsalted)
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons unsalted butter
  • 4 garlic cloves crushed
  • 1/2-1 pound raw shrimp shelled and deveined
  • 2 tablespoons white wine
  • 1/2 teaspoon homemade italian seasoning
  • 1/2 teaspoon coarse kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup heavy cream
  • 3/4 cup shredded parmesan cheese

Instruction

  1. Preheat the broiler. Line a baking sheet with aluminum foil or parchment paper. Set aside.
  2. Cut the top off your bread bowl and using your fingers, hollow out the center, leaving high rims around the edges, reserving bread pieces for serving.
  3. In a small bowl, whisk together the melted butter, garlic powder and onion powder. Baste the butter mixture over the instead of the bread bowl.
  4. Toast bread under broiler for 3-4 minutes or until crispy.
  5. In a large skillet, melt the butter over medium heat. Saute the garlic until fragrant and soft.
  6. Add the shrimp, stirring until pink and starting to curl.
  7. Add the white wine, Italian seasoning, salt, pepper and cream. Stir until heated, approximately 1-2 minutes.
  8. Add the parmesan cheese, stirring until it becomes thick.
  9. Ladle into the toasted bread bowl, garnish with parsley, if desired, and serve!
