Ingredients
- 1-1/4 cups all-purpose flour
- 3/4 cup sugar
- 1/3 cup baking cocoa
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1 large egg, room temperature
- 1/2 cup canola oil
- 1/3 cup whole milk
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup shredded zucchini
- 1/2 cup miniature semisweet chocolate chips, optional
Instruction
- In a bowl, combine flour, sugar, cocoa, baking soda, cinnamon and salt. Beat the egg, oil, milk, lemon juice and vanilla; stir into dry ingredients just until moistened. Fold in zucchini and if desired, chocolate chips. Fill 15 paper-lined muffin cups two-thirds full.
