Apple Cinnamon French Toast is the perfect way to start a fall family pajama day! This mouth-watering cinnamon french toast will start a new fall tradition in your house.
Ingredients
- 3 large red apples , peeled, cored and diced
- 1 cup light brown sugar
- 1/2 cup water
- 1 tablespoon lemon juice
- 1 teaspoon vanilla
- 1 cinnamon stick
- 1 large loaf french bread , cut into 1 inch slices
- 6 eggs
- 1 tablespoon milk
- 1 teaspoon nutmeg
- 1 teaspoon ground cinnamon
- cooking spray, butter
Instruction
- In a large, heavy saucepan, combine the cut apples, brown sugar, water, lemon juice, vanilla and a cinnamon stick.
- Heat the mixture over medium heat. Stir with a wooden spoon until the apples are well coated, the sugar has melted and the apples are starting to soften, approximately 15-18 minutes. They will not be fully soft. Keep the mixture warm.
- Heat the oven to 200°F. Heat the electric griddle to just below 350°F.
- While preheating, beat the eggs, 1 tablespoon of the milk, nutmeg and cinnamon in a shallow baking dish or pie plate.
- Spray the griddle with cooking spray or melt a small pad of butter. Working in batches of 4 slices, dredge a slice of French bread in the egg batter and place onto the griddle. Allow to cook on each side for 3-4 minutes or until light brown. Flip and cook on opposite side for 3-4 minutes. Remove to baking sheet and place in oven to keep warm. Repeat with the remaining bread.
- Top the French toast with apple compote, powdered sugar icing, chopped walnuts and whipped cream, if desired.
